Josh's Eggs Conchal

For our Honeymoon in August, we stayed at Paradisus Playa Conchal in Costa Rica. It was an all inclusive resort, and we ordered lots of room service ;) One of our favorites was a breakfast dish called Paradisus Eggs Conchal. Josh regularly makes us eggs for breakfast on weekends, and has created a copycat version of the Costa Rican dish. Its yummy! Eggs Conchal
serves 1 as posted, so multiply by the number of people you are feeding

1 piece bread, toasted and lightly buttered (we use wheat or whole grain)
2 eggs, cooked over medium (we like them a little runny)
1 slice cheese, cheddar or American (we had American on hand)
1/4 c. salsa
salt and pepper to taste

DIRECTIONS:
1. Cook eggs over medium. Toast and butter the bread.
2. When eggs are almost done, put the slice of cheese on top to melt.
3. Place toast in middle of plate. Place eggs with cheese on top on bread. Salt and pepper to taste.
4. Scoop salsa on top of everything. Enjoy!

REVIEW:
This is one of our go-to breakfasts. Its fast and easy! In Costa Rica, it was also served with a little cup of black beans on the side, but I don't keep those on hand so we skip that part. We sometimes serve with a side of breakfast meat (bacon or sausage), but on this day we had some left over steak from the previous nights dinner.
